An inspired and generous couple

In the kitchen, Julien expresses his natural generosity, driven by a desire to delight the restaurant’s diners with truly delicious dishes. Having trained at the Lycée Hôtelier in Le Touquet and after stints at some of France’s finest restaurants (including La Maison Carrier at Hameau Albert Ier in Chamonix and Akashon, the restaurant of the Heliopic hotel), the result is a feast for the eyes and the taste buds, with beautifully presented dishes and clever flavour combinations which offer a twist on traditional dishes.

In the restaurant’s dining room, Jessica is a congenial and good-natured host, ensuring that everyone feels comfortable. Having grown up in a family of restaurateurs, she also spent time working in Chamonix, where she met Julien. Today, she welcomes diners to Auberge de la Rivière, where she lives, determined to make each one feel genuinely at home.

Traditional cuisine with a contemporary twist

In this restaurant in Foncine-le-Haut, the menu features local ingredients from the Jura region and showcases the chef’s expertise and inspiration: having worked at various prestigious restaurants, Julien has created an impressive menu of traditional dishes with a touch of creativity, influenced by his roots in the north of France and the Savoie region, on the border between France and Italy, where he and his wife used to live.

The result? Cuisine which is authentic and generous, like the food served in mountain chalets, yet sophisticated and surprising, inspired by years spent working at some of France’s finest restaurants. Every meal is a pleasure!

Seasonal ingredients, freshly prepared dishes

Julien creates his menus using carefully chosen seasonal ingredients from local suppliers, depending on availability: cheese comes from the neighbouring dairy, charcuterie is supplied by the village butcher, fruit, vegetables and meat are all local, freshwater fish are supplied by a fish farm which is close to the auberge, while saltwater fish and seafood are bought in Boulogne-sur-Mer. It’s all about using the finest ingredients to bring out the incredible flavours of his gourmet dishes.

The wine and beer list!

When creating their wine list, Jessica and Julien like to meet with wine-makers, discussing the history of their wine estates and their production methods. As such, the restaurant’s wine list features a number of vintages from this renowned wine-producing region, along with bottles from all over France (many of which are organic and natural wines) and wines from around the world: the perfect accompaniment to dishes which boast truly international inspiration.

A keen beer drinker, Julien has also chosen a variety of beers, many of which are craft beers, including the entire range by Brasserie Origine du Monde in Orgelet in the Jura.
